Beef Strips with Orange and Ginger
|Lean beef rump/Fillet or sirloin||1 Pound, cut into thin strips (450 g)|
|Orange||1 , juiced and rind grated|
|Light soy sauce||15 Milliliter (1 tbsp)|
|Cornflour||1 Teaspoon (5 ml)|
|Ginger root piece||1 Inch, finely chopped|
|Sesame oil||2 Teaspoon (10 ml)|
|Carrot||1 Large, cut into thin strips|
|Spring onions||2 , thinly sliced|
1. Place the beef strips in a bowl and sprinkle over the orange rind and juice. If possible, leave to marinate for at least 30 minutes.
2. Drain the liquid from the meat and set aside, then mix the meat with the soy sauce, cornflour and ginger.
3. Heat the oil in a wok or large frying pan and add the beef. Stir-fry for 1 minute until lightly coloured, then add the carrot and stir-fry for a further 2-3 minutes.
4. Stir in the spring onions and reserved liquid, then cook, stirring, until boiling and thickened. Serve hot with rice noodles or plain boiled rice.
