Boiled Brisket Of Beef

Ingredients
  Onion 1 , stuck with 2 whole cloves
  Beef brisket 4 Pound, trimmed of fat
  Cut up celery 1 Cup (16 tbs) (with tops)
  Cut up carrots 1 Cup (16 tbs)
  Coarsely chopped parsley 1⁄4 Cup (4 tbs)
  Bay leaf 1
  Whole black peppers 3
  Salt 1 Tablespoon
  Parsley sprigs 3
Directions

1. Bring 2 quarts water to boiling in large kettle. Add all ingredients, except parsley sprigs; bring to boiling.
2. Reduce heat; simmer, covered, 3 hours, or until meat is tender.
3. Garnish with parsley sprigs; serve with Low-Calorie Horseradish Sauce.
