Corned Beef Platter

Ingredients
  Corned beef brisket 4 Pound
  Sweet potatoes 4 Large, peeled
  Onions 8
  Canned pineapple chunks 20 Ounce (1 Can)
  Brown sugar 2 Tablespoon
  Cornstarch 1 Tablespoon
Directions

Place meat into a Dutch oven, adding juices and spices from package, if desired.
Add water to cover meat.
Bring to boiling; reduce heat and simmer, covered, 2 1/4 hours or till nearly tender.
Cut potatoes into 1-inch pieces; add with onions to Dutch oven.
Cover; cook 20 minutes.
Drain pineapple; reserving syrup.
Add pineapple to pan; cook 10 minutes or till potatoes are tender.
In small saucepan mix sugar and cornstarch; stir in reserved syrup.
Cook and stir till bubbly.
Arrange vegetables and pineapple around meat on a heated platter.
Spoon glaze over.
