Ingredients
  Boiling beef 2 Pound (Brisket, Rump, Or Chuck Roast)
  Marrow 1⁄2 Pound, cracked
  Cold water 2 1⁄2 Quart
  Carrot 1 , diced
  Stalk celery 1 , diced
  Chopped onion 1⁄4 Cup (4 tbs)
  Salt 2 Teaspoon
  Peppercorns 5
  Crushed thyme 1 Teaspoon
  Bay leaf 1
  Garlic 1 Clove (5 gm), crushed
  Parsley sprigs 1
  Turnip 1 , quartered
  Carrots 4 , halved
  Leeks 4 , trim to within 1 inch above white end (Trim To Within 1 Inch Above White End)
  Celery stalks 2 , halved
  Whole onion 1 , insert whole cloves
  Whole cloves 3
Directions

Place meat, bone, and water in large kettle; add diced carrot and celery, chopped onion, and next 6 seasonings.
Heat to boiling; simmer gently uncovered 3 hr., skimming off foam frequently.
Add remaining ingredients; cover and simmer 1 hr.
Arrange meat and vegetables on a platter.
Strain broth through cheesecloth; season to taste.
