Every Morning Corned Beef Hash
|Chopped cooked corned beef||2 1⁄2 Cup (40 tbs)|
|Diced boiled potatoes||2 1⁄2 Cup (40 tbs) (Cold)|
|Onion||1 Medium, chopped|
|Drippings/Shortening / margarine / butter||1 Tablespoon|
|Rich milk/Evaporated milk||1⁄2 Cup (8 tbs)|
1. Mix the beef, potatoes and onion.
2. Heat the drippings in a large frying pan, turn the meat mixture into it. Add the milk a little at a time and spread the mixture flat over the pan. Keep over very low heat and brown it on the bottom. This should take 40 to 45 minutes.
3. Sprinkle with salt and pepper. Fold like an omelet and slip it onto a hot platter.
