Beefy Tex Mex Dinner
|Lean ground beef||1 Pound|
|Onion||1 Medium, chopped|
|Canned tomatoes||20 Ounce (2 Can, With Green Chilies)|
|Canned red kidney beans||16 Ounce, drained (1 Can)|
|Water||1 Cup (16 tbs)|
|Long grain rice||2⁄3 Cup (10.67 tbs)|
|Chili powder||1 Teaspoon|
|Ground cumin||1⁄4 Teaspoon|
|Shredded cheddar cheese||2 Ounce (1/2 Package)|
In a medium skillet cook ground beef and onion till meat is brown and onion is tender.
Drain off fat.
Stir undrained tomatoes with green chili peppers, kidney beans, water, rice, chili powder, and cumin into skillet.
Bring to boiling.
Reduce heat and simmer, covered, about 20 minutes or till rice is tender.
Sprinkle with cheese.
