Sweet Sour Tripe

Ingredients
  Honeycomb tripe 1 1⁄2 Pound
  Salt 1 Teaspoon
  Water 1 1⁄2 Cup (24 tbs)
  Vinegar 3 Tablespoon
  Onion 1 Small, minced
  Garlic bud 1⁄2 , crushed
  Whole cloves 4 , crushed
  Powdered allspice 1⁄8 Teaspoon
  Marjoram 1⁄8 Teaspoon
  Pepper 1⁄8 Teaspoon
  Flour 1 Tablespoon
  Sugar 1 Tablespoon
  Butter/Margarine 2 Tablespoon, melted
Directions

1. Cut the tripe in squares, then cook 2 hours in salted water, according to instructions for boiling tripe .
2. Use an enamel or glass kettle, add 1 1/2 cups water, the vinegar, onion, garlic, cloves, allspice, marjoram and pepper. Cover and cook 10 minutes.
3. Mix the flour and sugar and blend into the melted butter or margarine. Stir this thickening into the tripe liquid and cook 3 minutes, stirring constantly.
