Tomato Beef

Ingredients
  Grated ginger 2 Tablespoon
  Garlic 2 Clove (10 gm), minced
  Cornstarch 1 Teaspoon
  Sugar 1 Teaspoon
  Sirloin tip 1 Pound, thinly sliced
  Oil 4 Tablespoon
  Tomatoes 1 Pound, quartered (Medium Pieces)
  Celery stalks 4 , diagonally cut into 1 inch pieces
  Green onions 6 , cut into 1/2 inch pieces
  Green pepper 1 , cut into 1 inch squares
  Onion 1 , cut into 1/2 inch strips
  Cornstarch 2 Teaspoon, dissolved
  Water 3⁄4 Cup (12 tbs)
  Soy sauce 1 Teaspoon
  Cooked rice 1⁄2 Cup (8 tbs)
Directions

Combine first 5 ingredients in large bowl.
Add meat and marinate at room temperature for 10 minutes.
Discard marinade.
Heat 2 tablespoons oil in large skillet over high heat.
When light haze forms, add meat and stir-fry about 2 minutes.
Remove with slotted spoon and set aside.
Add 1 to 2 tablespoons more oil to skillet.
When hot, add vegetables and stir-fry until crisp-tender .
Reduce heat, add dissolved cornstarch mixture and simmer until thickened, 1 to 2 minutes.
Stir in meat and simmer an additional 2 minutes to heat through.
