Ingredients
  Beef shin 12 Ounce
  Stock 2 Pint (Use Stock Of Good Quality)
  Seasoning 1 Teaspoon
  Onion 1
  Carrot 1
  Celery 100 Gram (A Small Piece)
  Parsley sprigs 2
  Bay leaf 1
  Sherry 2 Teaspoon (1 Dessertspoon)
  Egg white 1
Directions

Cut meat into small pieces and put into saucepan with remaining ingredients, except sherry.
Simmer very gently for 1 hour, then strain through several thicknesses of muslin.
Add sherry, if used.
To clear consomme add a stiffly beaten egg white and clean egg shell and gently simmer for 20 minutes; restrain and serve.
