Ground Beef Garden Saute

Ingredients
  Slivered almonds 1⁄2 Cup (8 tbs)
  Lean ground beef 1 Pound
  Onion 1 Medium, chopped
  Garlic 2 Clove (10 gm), minced or pressed
  Thinly sliced green beans/Thinly sliced zucchini / whole edible-pod peas 1 1⁄2 Cup (24 tbs)
  Eggs 4
  Soy sauce 1 Tablespoon
  Ground ginger 1 Teaspoon
  Dry mustard 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
Directions

Spread almonds in a shallow pan and toast in a 350° oven for about 6 minutes or until golden.
Set aside.
Crumble beef into a wide frying pan over medium heat and cook, stirring often, until browned.
Add onion and garlic and cook until onion is soft.
Add green beans; cook, stirring often, until just tender (3 to 5 minutes).
In a small bowl, beat eggs slightly; then beat in 1 tablespoon soy, ginger, mustard, and pepper.
Pour egg mixture over meat and cook until egg is set to your liking, lifting and turning mixture to cook it evenly.
Top with almonds; pass additional soy at the table.
