Beef Tongue With Raisin Sauce
|Smoked beef tongue||4 Pound (1 Piece)|
|Onion||1 Large, quartered|
|Raisin sauce||1⁄2 Cup (8 tbs)|
Place meat, celery, bay leaves and onion in Dutch oven and add enough water to cover.
Cover and cook over low heat, simmering 3-4 hours until meat is tender.
Plunge tongue in cold water.
Peel and chill.
Slice and serve with Raisin Sauce.
