Creamed Dried Beef On Toast
|Sweet green pepper||1 Medium, pepper, cored, seeded and chopped|
|Yellow onion||1 Medium, peeled and chopped|
|Mushrooms||1⁄4 Pound, sliced|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Milk||1 3⁄4 Cup (28 tbs)|
|Sliced dried beef||5 Ounce, chopped (2 Jars, 2 1/2 Ounces Each)|
1. Melt the butter in a 12-inch skillet over moderate heat. Add the green pepper and onion, and cook uncovered, for 5 minutes, or until the onion is tender. Add the mushrooms and cook for 3 minutes. Blend in the flour.
2. Gradually add the milk, stirring constantly until the mixture is smooth and thick—about 3 minutes. Stir in the beef and simmer, uncovered, for 1 minute. Serve over hot buttered toast, split biscuits, cornbread, or buttered noodles.
