Roast Beef With Horseradish Sauce
|Boneless beef round rump roast||6 Pound (1 Piece)|
|Dairy sour cream||1⁄4 Cup (4 tbs)|
|Prepared horseradish/Grated fresh horseradish||2 Tablespoon|
|Ground nutmeg||1 Dash|
|Whipping cream||1⁄2 Cup (8 tbs)|
Sprinkle meat with salt and pepper.
Place, fat side up, on rack in roasting pan; insert meat thermometer.
Roast in 325° oven for 2 to 2 1/2 hours or till thermometer registers 150° to 170°.
Let stand 15 minutes before carving.
Meanwhile, combine sour cream, horseradish, salt, sugar, and nutmeg.
Let mixture stand at room temperature while meat cooks.
To serve, beat whipping cream to soft peaks; fold into horseradish mixture.
Garnish with chives, if desired; pass with roast.
