Company Yankee Pot Roast

Ingredients
  Beef 4 Pound (for pot roast)
  Salt To Taste
  Water 1⁄4 Cup (4 tbs)
  Onion 1 Medium, sliced
  Diced turnip 1⁄2 Cup (8 tbs)
  Diced carrot 1⁄2 Cup (8 tbs)
  Sliced celery 1⁄4 Cup (4 tbs) (with leaves)
  Chopped parsley 2 Tablespoon
  Cooked peas 1⁄2 Cup (8 tbs)
  Canned sliced mushrooms 3 Ounce, drained (1 can)
Directions

Brown meat on all sides in heavy kettle, adding 1 tablespoon shortening if necessary.
Sprinkle with salt.
Put a rack in kettle under meat; add water and onion.
Simmer, covered, for 3 1/2 to 4 hours.
Add remaining ingredients except peas and mushrooms.
Simmer for 30 minutes, or until vegetables are done.
Then remove meat and thicken liquid with a flour-and-water paste if desired.
Add peas and mushrooms and heat.
Season to taste.
