  Beef eye round 1
For stuffing
  Lard 1⁄4 Cup (4 tbs)
  Water 4 Cup (64 tbs)
  Salt 1 Tablespoon
  Sweet chili peppers 1 , seeded
  Cilantro leaves/1/4 teaspoon ground coriander 3 (fresh coriander)
  Cured ham 2 Ounce
  Green pepper 1⁄2 , seeded
  Onion 1 Medium
  Raw potatoes 1 1⁄2 Pound, pared and diced
  Achiote lard/Oil 2 Tablespoon
  Tomato 1 , chopped
  Tomato sauce 1⁄2 Cup (8 tbs)

With a sharp knife make a deep cut in meat from both ends to the center.
Stuff meat and skewer or sew opening closed.
Melt lard in a large heavy kettle.
When hot, add meat and brown on all sides over high heat about 10 minutes.
Add water and salt.
Chop coarsely next 5 ingredients and add.
Cover kettle and cook over moderate heat for 2 1/2 hours.
Add remaining ingredients, and continue to cook, uncovered, for 45 minutes longer, or until sauce begins to thicken.
