Lechon De Mechar

|Lard||1⁄4 Cup (4 tbs)|
|Water||4 Cup (64 tbs)|
|Sweet chili peppers||1 , seeded|
|Cilantro leaves/1/4 teaspoon ground coriander||3 (fresh coriander)|
|Cured ham||2 Ounce|
|Green pepper||1⁄2 , seeded|
|Raw potatoes||1 1⁄2 Pound, pared and diced|
|Achiote lard/Oil||2 Tablespoon|
|Tomato||1 , chopped|
|Tomato sauce||1⁄2 Cup (8 tbs)|
With a sharp knife make a deep cut in meat from both ends to the center.
Stuff meat and skewer or sew opening closed.
Melt lard in a large heavy kettle.
When hot, add meat and brown on all sides over high heat about 10 minutes.
Add water and salt.
Chop coarsely next 5 ingredients and add.
Cover kettle and cook over moderate heat for 2 1/2 hours.
Add remaining ingredients, and continue to cook, uncovered, for 45 minutes longer, or until sauce begins to thicken.
