Beef And Pigeon Peas Pelau's picture
1 1/2 to 1 3/4 lbs lean stewing beef
2 tbs vinegar
1 tsp salt
Few dashes soy sauce
1/2 tsp monosodium glutamate
2 green onions, chopped fine
1/2 tsp garlic powder
1 onion, chopped
1 or 2 tbs ketchup
2 tbs oil
2 tsp sugar
1/3 to 1/2 lb salt pork, diced
3 cups boiling water
1/2 lb regular rice
1 can pigeon peas or kidney beans, drained
1 tbs butter

Cut beef into 3/4 to 1-inch cubes and stir in the next eight ingredients.
Let stand for 30 to 45 minutes.
Heat oil and add sugar.
When sugar is golden add meat plus seasonings and salt pork; stir-fry until meat is nicely browned.
Add boiling water and cover.
Simmer for 1 hour.
Add rice and cover.
Simmer until rice and meat are tender adding a little more boiling water if necessary.
Add drained peas or beans and butter.
Reheat thoroughly and taste for seasoning.
