Easy Beef Goulash
|Beef drippings||2 Tablespoon|
|Onions||2 Medium, peeled and sliced|
|Potatoes||2 Medium, pared and cubed|
|Cubed cooked roast beef||2 Cup (32 tbs)|
|Worcestershire sauce||1 Tablespoon|
|Ketchup||1⁄4 Cup (4 tbs)|
|Dry mustard||1⁄2 Teaspoon|
|Water||2 Cup (32 tbs)|
1. Heat drippings in a 2-quart glass casserole in microwave oven (20 to 30 seconds at HIGH). Add onion, potato and paprika. Cover with an all-glass lid or plastic wrap. Cook in microwave oven 3 minutes at HIGH.
2. Add meat to casserole along with Worcestershire sauce, ketchup, dry mustard, salt and pepper; mix. Cook covered in microwave oven 3 minutes at HIGH.
3. Mix about 2 tablespoons of the water with cornstarch. Stir cornstarch mixture and remaining water into casserole mixture. Cook covered in microwave oven 10 to 12 minutes at HIGH; stir occasionally.
