Beef Crepes With Blue Cheese

  Ground beef 1 Pound
  Chopped onion 1⁄2 Cup (8 tbs)
  Vegetable oil 2 Teaspoon
  Egg 1
  Crumbled blue cheese 1⁄3 Cup (5.33 tbs)
  Finely chopped ripe olives 1⁄2 Cup (8 tbs)
  Sour cream 1 Cup (16 tbs)
  5 inch crepes/Pancakes 15
  Salt To Taste
  Pepper To Taste

Brown beef and onion in oil.
Mix slightly beaten egg with cheese and add to beef along with olives and sour cream.
Simmer for 5 minutes, stirring constantly.
Salt and pepper to taste.
When mixture has cooled, fill crepes.
Roll up and place on buttered cookie sheet.
Brush tops with a little melted butter and bake in a 375° oven for 20 minutes.
These can be frozen and popped into the oven for about 25 minutes.
Can be served with a cheese or mushroom sauce.
