|Onion||1 Small, sliced|
Clean pig's head, soak in cold water 6 to 12 hours; change water once.
Place with other meat in large saucepan, cover with boiling water.
Bring to boil again, skim well; add remaining ingredients.
Reduce heat; simmer covered, 1 1/2 to 2 hours or until meat is very tender.
Remove meat from bones, cut into small pieces.
Measure liquid, return liquid to saucepan, continue boiling until liquid is reduced to half quantity; strain.
Replace strained liquid and meat in saucepan, bring to boil, season to taste.
Pour into lightly oiled 9 x 5 in. loaf tin; cool, then refrigerate until set.
