Combine first 8 ingredients with 1/4 cup water.
Unroll roast and spread with bread mixture; sprinkle with remaining ingredients.
Reroll roast and tie securely; fasten ends with skewers.
Place on rack in shallow baking pan.
Roast at 325° to desired doneness, allowing 1 1/2 to 2 hours for rare, 1 3/4 to 2 1/4 hours for medium, or 2 to 2 1/2 hours for well-done.
