Roast Beef Chimichangas
|Shredded beef||2 Cup (32 tbs) (Canned Roast Beef Works Great)|
|Melted butter||1 Tablespoon|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Shredded lettuce||1⁄4 Cup (4 tbs)|
|Chopped tomato||1⁄4 Cup (4 tbs)|
|Sliced avocado||1⁄4 Cup (4 tbs)|
|Chopped green onion||1⁄4 Cup (4 tbs)|
|Grated cheese||2 Tablespoon|
|Sour cream||1⁄4 Cup (4 tbs)|
Heat roast beef in juice or gravy.
Add chopped onion and spices.
Spoon about 1/4 cup of the warmed shredded beef mixture in a line across center of tortilla.
Fold tortilla over, roll once, fold ends in, and continue to roll all the way, making a burro.
Place these burros side by side in a shallow buttered baking dish.
Brush melted butter generously on tops and sides of burros.
Bake in a hot oven (500°) for 5 to 10 min, until browned.
Watch closely while baking and baste with more butter if necessary.
