Main Event Corned Beef
|Corned beef brisket||4 Pound|
|Peeled potatoes||6 Small|
|Scraped carrots||6 , halved|
|Cabbage||1 Small, wedged|
Place corned beef in large, heavy kettle.
Add beer and enough water to cover.
Add peppercorns, bay leaf and thyme.
Bring to boil.
Reduce heat, cover and cook 3 to 3 1/2 hr. until tender.
If desired, add potatoes, carrots or cabbage 30 min before meat is done.
