Roast Beef With Yorkshire Pudding
|Beef roast||5 Pound (sirloin tip or top round)|
|All purpose flour||1 Cup (16 tbs)|
|Eggs||2 Small, beaten|
|Milk||3⁄4 Cup (12 tbs)|
|Water||1⁄2 Cup (8 tbs)|
Preheat oven to 425° F.
Roast the beef, uncovered, for 20 minutes.
Lower oven temperature to 375° F and continue to roast for 1 hour and 15 minutes for medium, basting frequently.
Meanwhile, sift flour and salt together in a medium bowl.
Make a well in the center, add eggs, and stir.
Add milk and water and beat to make a smooth batter.
When roast is done, remove to a serving platter and keep warm.
Pour pudding batter into roasting pan; return to oven and bake 30 minutes, or until pudding is risen and golden.
