New England Boiled Dinner
|Corned beef||3 Pound|
|Water||4 Cup (64 tbs)|
|Potatoes||2 Large, peeled and quartered|
|Carrots||3 , sliced|
In 3-quart casserole, combine corned beef, water, bay leaf, peppercorns and cloves.
Cook tightly covered, 60 minutes turning meat once or twice.
Drain off about 1 1/2 cups water and turn corned beef.
Add potatoes and carrots.
Cook covered, 15 minutes; add cabbage wedges and cook covered, 10 minutes longer or until vegetables are tender.
To serve, slice meat across the grain.
