Gourmet Corned Beef
|Corned beef brisket||5 Pound (Or Rump)|
|Water||2 1⁄2 Quart|
|White table wine||2 Cup (32 tbs)|
|Onion||1⁄2 Cup (8 tbs), finely chopped|
|Garlic powder||1⁄8 Teaspoon|
|Dried dill||1 Teaspoon|
|Orange||1 Small, sliced|
Cover corned beef completely with cold water in a large saucepan, bring to a boil, and simmer for 1/2 hour.
Discard this cooking water.
Cover beef again with 2 1/2 quarts of water and add all remaining ingredients.
Cover and simmer until meat is tender, about 3 hours.
Allow beef to cool in liquid, if not to be served immediately after cooking.
Place weight on top of cooling beef for better slice conformity.
This freezes well.
