Fiji Beef Chunks

  Beef round steak 2 Pound, cut into 3/4 inch cubes
  Garlic 1 Clove (5 gm), finely chopped
  Wine vinegar 1⁄4 Cup (4 tbs)
  Canned beef broth 10 1⁄2 Ounce (1 Can)
  Sliced celery 1⁄2 Cup (8 tbs)
  Green pepper 1 , chopped
  Onion 1 Large, sliced
  Tomatoes 2 Large, diced
  Canned pineapple chunks in juice 13 1⁄2 Ounce (1 Can)
  Firmly packed brown sugar 4 Tablespoon
  Cornstarch 3 Tablespoon
  Soy sauce 2 Tablespoon
  Paprika 1 Teaspoon
  Water 1⁄4 Cup (4 tbs)

Sprinkle beef cubes with chopped garlic and 2 tablespoons of the vinegar.
Pour beef broth over meat.
Microwave 8 minutes on high, stirring after 5 minutes.
Add celery, green pepper and onion.
Microwave 20 minutes on medium.
Stir in tomatoes and pineapple chunks.
Blend brown sugar, corn starch, soy sauce, paprika, water and remaining vinegar.
Stir into sauce.
Microwave 4 to 6 minutes on medium, or until sauce has thickened and meat is fork tender.
