Fiji Beef Chunks
|Beef round steak||2 Pound, cut into 3/4 inch cubes|
|Garlic||1 Clove (5 gm), finely chopped|
|Wine vinegar||1⁄4 Cup (4 tbs)|
|Canned beef broth||10 1⁄2 Ounce (1 Can)|
|Sliced celery||1⁄2 Cup (8 tbs)|
|Green pepper||1 , chopped|
|Onion||1 Large, sliced|
|Tomatoes||2 Large, diced|
|Canned pineapple chunks in juice||13 1⁄2 Ounce (1 Can)|
|Firmly packed brown sugar||4 Tablespoon|
|Soy sauce||2 Tablespoon|
|Water||1⁄4 Cup (4 tbs)|
Sprinkle beef cubes with chopped garlic and 2 tablespoons of the vinegar.
Pour beef broth over meat.
Microwave 8 minutes on high, stirring after 5 minutes.
Add celery, green pepper and onion.
Microwave 20 minutes on medium.
Stir in tomatoes and pineapple chunks.
Blend brown sugar, corn starch, soy sauce, paprika, water and remaining vinegar.
Stir into sauce.
Microwave 4 to 6 minutes on medium, or until sauce has thickened and meat is fork tender.
