Beef And Beans
|Lean stewing beef||2 1⁄2 Pound, cut in 1-inch cubes|
|Onions||2 Large, chopped|
|Freshly ground pepper||To Taste|
|Smoked sausage||1 Pound, cut into 1 inch pieces|
|Sprouted kidney beans||2 Cup (32 tbs) (Not Steamed)|
|Dry red wine||1 Cup (16 tbs)|
|Beef bouillon||2 Cup (32 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Lemon||1⁄2 , rind grated|
|Chopped parsley||3 Tablespoon|
Preheat oven to 325°.
In large 3-qt.casserole put beef, onions, salt and pepper.
Cover and place in oven.
Cook for 1 hour.
Add remaining ingredients except brandy and parsley.
Cover and cook for 1/2-2 hours until meat and sprouts are tender.
