Stuffed Rolled Rib Roast
|Thinly sliced fully cooked ham||4 Ounce, chopped|
|Bacon slices||3 , snipped|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Chopped pimiento stuffed green olives||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Boneless beef rib roast||5 Pound|
In bowl combine chopped ham, snipped bacon, onion, olives, garlic, and beaten egg.
Unroll roast; spread ham mixture over meat.
Reroll roast; tie securely.
Place roast, fat side up, on rack in shallow roasting pan Roast, uncovered, at 325° about 3 hours for rare.
Let stand about 15 minutes.
Remove strings and carve
