Christmas Two Rib Beef Roast

|Dried sage||1 Teaspoon|
|Kosher/Sea salt||1 Teaspoon|
Preheat oven to 325°F Place roast, bone side down, on rack in open roasting pan.
Rub surface with herbs and salt.
Do not add water.
Do not cover.
Insert meat thermometer in thickest part, not touching fat or bone.
Roast to desired doneness (about 27 to 30 minutes per pound for medium).
Remove roast when meat thermometer registers 155°F Allow roast to stand tented with foil 10 to 20 minutes before carving. (Roast temperature will continue to rise about 5°F)
