Company Casserole

  Butter 2 Teaspoon
  Green pepper 1⁄4 Cup (4 tbs), chopped
  Flour 1 Teaspoon
  Salt 1 Teaspoon
  Pepper 1 Dash
  Milk 1⁄2 Cup (8 tbs)
  Egg 1 , beaten
  Sour cream 1⁄4 Cup (4 tbs)
  Low calorie mayonnaise 1⁄2 Cup (8 tbs)
  Mixed vegetables 14 Ounce, drained, rinsed (La Choy)
  Tuna 7 Ounce, drained, flaked
  Tomatoes 2 , peeled and 2 cut into wedges
  Chow mein noodles 1⁄2 Cup (8 tbs), crushed (La Choy)

Melt butter in a saucepan; add green pepper and cook 2 minutes.
Blend in flour, salt and pepper.
Gradually add milk; cook, stirring, until slightly thickened.
Blend together egg, sour cream and mayonnaise; stir into sauce.
Add vegetables and tuna.
Turn into buttered 1 qt. (1 L.) casserole.
Arrange tomato wedges on top.
Sprinkle crushed noodles over tuna mixture.
Bake at 375°F (190°C) for 25 minutes.
