Spicy Beef And Mushrooms In Pita
|Salad oil||1 Tablespoon|
|Walnuts||1⁄4 Cup (4 tbs), coarsely broken|
|Ground beef||1 Pound|
|Onion||1 Medium, diced|
|Mushrooms||1⁄4 Pound, sliced|
|Crushed red pepper||1⁄2 Teaspoon|
|6 inch pitas||2|
|Lettuce leaves||4 Large|
1. In 12-inch skillet over medium-high heat, in hot salad oil, cook walnuts, stirring occasionally, until golden, about 5 minutes. Remove walnuts to paper towels to drain. Wipe skillet clean.
2. In same skillet over high heat, cook ground beef and onion, stirring, until pan juices evaporate and meat is browned. Add mushrooms, tomatoes with their liquid, sugar, red pepper, and salt; over high heat, heat to boiling. Reduce heat to medium and cook, uncovered, 10 minutes until liquid is absorbed.
3. To serve, cut each pita crosswise in half; tuck a lettuce leaf into each pita half. Spoon meat mixture into pita; sprinkle with walnuts.
