Beef & Broccoli
|Lean ground beef||1 Pound|
|Soy sauce||4 Tablespoon, divided|
|Dry sherry||2 Tablespoon|
|All purpose flour||1 Tablespoon|
|Seasoned rice vinegar||1 Tablespoon|
|Grated gingerroot/1 teaspoon ground ginger||2 Teaspoon|
|Fresh broccoli||1 Pound, stems sliced, tops broken into flowerets|
|Onion||1 Medium, sliced crosswise, separated into rings|
|Hot pepper sauce||1 Dash|
|Hot cooked rice||2 Cup (32 tbs)|
|Freshly ground pepper||To Taste|
Crumble ground beef into large microwave-safe bowl.
Stir together soy sauce, sherry, flour, sugar, vinegar and gingerroot in 2-cup glass measure.
Add to ground beef; mix well.
Cover; chill 30 minutes.
Microwave marinated ground beef mixture, uncovered, on HIGH 6 minutes or until ground beef is no longer pink, stirring twice during cooking.
Drain; keep meat warm.
Combine broccoli and onions in microwave-safe casserole dish.
Cover with plastic wrap; vent.
Microwave on HIGH 5 to 6 minutes or until crisp-tender.
Add to meat with hot pepper sauce; mix lightly.
Season with salt and pepper to taste.
