Braised Calf Tongue

Ingredients
  Solid pork fat 2 Tablespoon, diced
  Onion 1 Small, minced
  Butter 2 Tablespoon
  Flour 2 Tablespoon
  Beef broth 1 Cup (16 tbs)
  Cooked tongue slices 8 Ounce (Four 2 Ounce Pieces)
  Mashed potatoes 2 Cup (32 tbs) (Hot)
  Salt To Taste
  Pepper To Taste
Directions

In a small casserole dish, lightly brown lard and onion.
Fold in butter and flour.
Pour broth into mixture.
Simmer a few minutes.
Add cooked tongue slices.
Season to taste with salt and pepper.
Continue cooking 10 minutes.
Meanwhile, whip mashed potatoes until fluffy.
Pipe a crown of mashed potatoes onto a serving dish.
Pile braised tongue slices into the middle of potato crown.
