Beef With Walnuts And Kiwi
|Sliced rare roast beef||4 Ounce, cut into 12 uniform pieces|
|Finely chopped walnuts||1⁄4 Cup (4 tbs), toasted|
|Fresh lemon juice||1 Tablespoon|
|Olive oil||1 Tablespoon|
|Wine vinegar||1 Tablespoon|
|Snipped dill||1 Tablespoon|
|Garlic clove||1 Small, crushed|
|Freshly ground black pepper||1⁄4 Teaspoon|
|French bread slices||12 (1/4 Inch Thick)|
|Kiwi||2 , peeled, cut into 12 slices|
|Pimiento||1 , cut into small star shapes|
Place roast beef slices in glass dish; sprinkle with walnuts.
Combine lemon juice, oil, vinegar, dill, garlic, pepper and salt.
Pour over beef and walnuts, lifting meat to coat.
Cover and marinate 30 minutes.
To assemble, arrange one piece beef with walnuts on bread round.
Top with kiwi slice; garnish with pimiento.
