Apricot Glazed Pork Roast

Ingredients
  Apricot preserves 12 Ounce (1 Jar)
  Ginger 1⁄2 Teaspoon
  Lemon juice 1 Tablespoon
  Pork rib roast 5 Pound
  Pepper To Taste
Directions

In small glass bowl, combine preserves, ginger and lemon juice.
Cook at HIGH to 2 minutes or until hot.
Season roast with pepper.
Place roast fat-side down on microwave roasting rack set in 12x8-inch dish.
During cooking, baste roast with glaze three times.
TO COOK BY TEMPERATURE: Insert probe into center of roast.
Set Insta-Matic TEMP 6 or Programmable Temp at MEDIUM-LOW 100°F and LOW 170°F.
When temperature in display window reaches 100°F, remove probe from roast without disconnecting from oven.
Turn roast fat-side up.
Reinsert probe in a new hole.
Continue cooking.
Occasionally drain liquid.
TO COOK BY TIME: Cook at MEDIUM-LOW 12 to 13 1/2 minutes per pound, or until roast registers 170°F when tested with a conventional meat thermometer.
Halfway through cooking, turn roast fat-side up.
Occasionally drain liquid.
TO COMPLETE: Let stand, covered, 15 minutes before carving.
