Beef A La Esterhazy
|Beef top loin||1 3⁄4 Pound|
|Soup greens||1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)|
|Broth/Bouillon||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon|
|Thick sour cream||1⁄2 Cup (8 tbs)|
Brush meat with hot lard or other shortening; brown on all sides on the griil.
Season with salt, pepper, and paprika.
Clean and chop the soup greens and onion.
Brown lightly in a small amount of fat in a skillet.
Sprinkle with the flour and stir until blended.
Gradually add the broth, cooking and stirring until mixture comes to boiling.
Add the meat and finish cooking together with the vegetables.
Remove meat and strain the sauce into a saucepan; add the lemon juice, wine, and sour cream.
Blend well and season to taste.
Add sliced meat to the sauce.
