Easy Beef Goulash
|Beef drippings||2 Tablespoon|
|Onions||2 Medium, peeled and sliced|
|Potatoes||2 Medium, pared and cubed|
|Cubed cooked roast beef||2 Cup (32 tbs)|
|Worcestershire sauce||1 Tablespoon|
|Ketchup||1⁄4 Cup (4 tbs)|
|Dry mustard||1⁄2 Teaspoon|
|Water||2 Cup (32 tbs)|
1. Heat drippings in a 2-quart glass casserole in microwave oven until hot (20 to 30 seconds at High). Add onion, potato and paprika. Cover with an all-glass lid or plastic wrap. Cook 8 minutes at High; stir twice.
2. Add meat to casserole along with Worcestershire sauce, ketchup, dry mustard, salt and pepper; mix. Cook covered in microwave oven 3 minutes at High.
3. Mix about 2 tablespoons of the water with cornstarch. Stir cornstarch mixture and remaining water into casserole mixture. Cook covered in microwave oven 10 to 12 minutes at High, or until potatoes are tender; stir every 3 minutes.
