Ingredients
  Garlic 1 Clove (5 gm), chopped
  Marjoram 1 Teaspoon
  Pork fat 4 Ounce, salted
  Chuck short rib roast 2 Pound (1 Piece)
  Cloves 6
  Vegetable oil 1 Tablespoon
  Butter 1 Tablespoon
  Beef broth 2 Cup (32 tbs)
  Onion 1 , chopped
  Carrots 3 , sliced
  Celery 1 Cup (16 tbs), chopped
  Salt To Taste
  Pepper To Taste
Directions

Preheat oven to 350 °F (175 °C).
On a sheet of wax paper, sprinkle garlic, marjoram, salt and pepper.
Dredge diced pork fat.
Make incisions into beef slice.
Stick diced pork fat and cloves into incisions.
In an ovenproof casserole dish, heat oil and melt butter.
Lightly brown beef slice on both sides.
Pour in broth.
Bring to a boil.
Add onion, carrots and celery.
Adjust seasoning.
Cover.
Braise in oven 90 minutes or until beef is tender.
