Ingredients
  Beef tenderloin 32 Ounce, chopped finely
  Caviar 1 Ounce
  Jalapeno 1 , sliced thin, no seeds
  Cherry tomatoes 4 , cut in 0.25
  Red onion 1 Small, julienned
  Mango 1 , diced
  Asian pear 1 , diced
  Mascarpone 2 Ounce
  Cilantro 1 Teaspoon (Micro)
  Mayonnaise 1 Cup (16 tbs)
  Chinese chili paste 2 Tablespoon (Tobanjan)
  Sesame oil 2 Tablespoon
  Lime juice 1 Tablespoon
Directions

Beef Tartar & Spicy Mayo Methods of Preparation

1. Combine ingredients for the spicy mayo.

2. For the beef, chop the tenderloin as fine as possible. Season with salt and pepper. Add 3-4 tablespoons of spicy mayo to taste.

3. Divide this mixture in 4.

4. Mold it onto a plate and garnish with tomato, a few slices of jalapeno, red onion, mango, pear, caviar, mascaporne, and cilantro.
