  Freshly ground pepper To Taste
For chimichurri compound butter:
  Red wine vinegar 1⁄2 Cup (8 tbs)
  Kosher salt 1 Teaspoon
  Garlic 4 Clove (20 gm)
  Shallot 1
  Fresno chili 1
  Cilantro 1⁄2 Cup (8 tbs)
  Parsley 1⁄4 Cup (4 tbs)
  Oregano 2 Tablespoon
  Unsalted butter 220 Gram
