Thrifty Skillet Dinner
|Ground beef||1 Pound|
|Canned tomatoes||1 Pound|
|Margarine||1⁄4 Cup (4 tbs)|
|Chopped onion||2 Tablespoon|
|Sweet basil||1 Teaspoon|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Squash zucchini||3 Medium|
Heat margarine in large skillet.
Pinch off walnut sized pieces of beef.
Place into skillet and stir gently to brown slightly.
Add onion and green pepper; simmer until limp.
Add tomatoes, salt, pepper and basil.
Cover and cook while you slice zucchini squash.
Uncover and pile squash over meat and sauce.
Cover and cook 10 to 15 minutes, stirring occasionally, until squash is tender.
Good with rice or mashed potatoes.
