Butter Beans In Cream
|Dried white butter beans||1 Pound|
|Garlic||1 Clove (5 gm), pressed|
|Carrots||2 Small, diced|
|Diced ham||1 Cup (16 tbs)|
|Freshly ground pepper||To Taste|
|Half and half||1⁄2 Cup (8 tbs)|
Rinse beans with cold water; place in large saucepan.
Cover with cold water; bring to boil.
Remove from heat; let stand 5 minutes.
Drain; cover again with cold water.
Add salt, onion, garlic, carrots, ham, and Bouquet Garni; bring to boil.
Cover; simmer 1 1/2 hours or until beans are tender.
Remove onion, if desired, and Bouquet Garni.
Season with pepper.
Stir in cream.
