Soya Bean Chutney
|Soy beans||1⁄4 Cup (4 tbs), soaked overnight|
|Chopped fresh coriander||1 Cup (16 tbs)|
|Ginger piece||2 Inch, chopped|
|Lime juice||5 Tablespoon|
|Mustard seeds||1 Teaspoon|
Cook the soya beans in boiling water for about 10 minutes.
Leave to cool.
Add the other chutney ingredients and blend into a paste with a little water.
Prepare the seasoning by heating the oil in a pan and adding the mustard seeds to it.
When the seeds begin to splutter add the curry leaves and asafoetida and saute for a minute.
Mix the seasoning into the chutney and serve with idlis, dosa or use as a spread for sandwiches.
