|Dried black beans||2 Pound|
|Salt||1 1⁄2 Teaspoon|
|Bacon||1⁄2 Pound, cubed (Unsliced)|
|Cooked sausage||1⁄2 Pound|
|Cooked ham||1⁄4 Pound, diced|
|Onion||1 Medium, chopped|
|Garlic||1 Clove (5 gm), crushed|
|Chili powder||1 Teaspoon|
|Black pepper||1⁄8 Teaspoon|
|Tomatoes||4 Medium, peeled and chopped|
|Hot cooked rice||6 Cup (96 tbs)|
|Orange slices||4 (For Garnish)|
Soak beans in water to cover for 8 hours, or overnight, in deep kettle.
Add salt and bacon to beans.
Place over medium heat and cook until beans are tender, adding more water if necessary.
Add sausage and ham; cook onion, garlic, chili powder, and pepper in a little oil in skillet until onion is tender; add tomatoes.
Cook for 10 minutes, stirring occasionally.
Add to bean mixture; simmer until desired consistency.
Serve with rice; garnish with orange slices
