Lamb Shanks And Lima Beans
|Dried lima beans||2 Cup (32 tbs)|
|Diced onion||1⁄2 Cup (8 tbs)|
|Garlic||1⁄2 Clove (2.5 gm), minced|
|Minced parsley||1⁄4 Cup (4 tbs)|
|Tomato puree||2 Cup (32 tbs)|
|Water||1 Cup (16 tbs)|
|Lamb shanks||4 Small, split into halves|
Soak washed beans overnight; or pour boiling water over them, cover and allow to soak 1 hour.
Drain, place soaked limas in cooker, add onion, garlic, and parsley.
Mix tomato puree, water and seasonings together and pour into cooker; mix well.
Top with lamb shanks browned well in melted fat.
Pressure cook at 15 lbs.pressure for 45 minutes.
Reduce pressure immediately.
