Vegetable Bean Tostadas

Ingredients
  6 inch corn tortillas/Flour tortillas with sesame seeds 12
  Salad oil 2 Tablespoon
  Shredded cheddar cheese/Jack cheese 2 Cup (32 tbs)
  Shredded romaine lettuce/Ice berg lettuce 3 Cup (48 tbs)
  Tomato 1 Large, chopped
  Roasted peanuts/Shelled sunflower seeds 1 Cup (16 tbs)
  Mexican cream/Sour cream 2 Tablespoon
  Bottled taco sauce 2 Tablespoon (Red / Green)
Directions

Prepare Spicy Vegetable Filling and keep warm.
Pour oil into a wide frying pan to a depth of 1/2 inch and heat to 350° on a deep frying thermometer.
Fry one tortilla at a time for about 30 seconds on each side, then drain on paper towels.
Let guests assemble tostadas by spreading filling on tortillas, sprinkling with cheese, then topping with lettuce, tomato, peanuts, Mexican Cream, and taco sauce as desired.
