Fundy Baked Beans
|Dried beans||2 Cup (32 tbs)|
|Cold water||1 1⁄2 Quart|
|Salt pork||1⁄4 Pound, sliced|
|Dry mustard||1 Teaspoon|
|Molasses/1/4 cup molasses and 1/3 cup brown sugar||1⁄2 Cup (8 tbs)|
Rinse beans; cover with cold water and soak overnight.
Next morning, add 1 teaspoon salt to beans and soaking water; cover, simmer about 1 hour.
Drain, reserving 3 cups bean liquid.
Put the onion and salt pork into bean pot.
Add beans, salt and pepper to taste, dry mustard, molasses, and reserved bean liquid to cover; mix well.
Bake at 300Â°F about 3 hours.
Add liquid as needed.
Remove cover for last 25 minutes.
