Summer Green Beans

This summer green beans recipe is a fresh and healthy recipe for preparing green beans. Made with parboiled green beans dressed with yogurt lemon juice and mustard, the summer green beans are served on lettuce and garnished with capers and parsley.
|Plain yogurt||1 1⁄2 Cup (24 tbs)|
|Chopped fresh parsley||1⁄3 Cup (5.33 tbs)|
|Fresh lemon juice||3 Tablespoon|
|Dijon mustard||3 Tablespoon|
|Freshly ground pepper||To Taste|
|Fresh green beans||1 Pound, parboiled and cut in 2-inch pieces|
|Butter lettuce leaves||1|
|Capers||1⁄4 Cup (4 tbs)|
|Chopped parsley||1 Tablespoon (For Garnish)|
Combine yogurt, parsley, lemon juice, mustard, salt and pepper in large bow .
Stir in beans.
Ar-range lettuce on platter; spoon beans into cen-ter.
Garnish with capers and parsley.
Excellent with cold meats, poultry and fish.
