Sardines And Beans
|Canned kidney beans||1 Pound, mashed|
|Onions||2 , chopped|
|Eggs||2 , beaten|
|Canned tomato sauce||8 Ounce|
|Sardines||1 Can (10 oz), cut in strips 2 x 1/2 inches (In Tomato Sauce)|
|Chili powder||1⁄2 Teaspoon|
|Chopped parsley||1 Tablespoon|
Saute beans and half the chopped onions in 4 tablespoons oil until mixture forms a paste; spread on baking sheet.
Cut in sections; place sardine strip on each section.
Roll as for jelly roll; dip in flour, then in beaten eggs.
Saute in oil in skillet until browned.
Drain on absorbent paper.
Combine remaining onion, salt, tomato sauce, remaining oil, chili powder, and parsley in saucepan.
Simmer until thickened; pour over bean roll.
Sprinkle with chopped parsley
