Green Beans A La Poulet

  Frozen cut green beans 9 Ounce (1 Package)
  Chicken broth 11 Tablespoon
  Finely chopped onion 1⁄2 Cup (8 tbs)
  Butter/Margarine 2 Tablespoon
  Flour 1 Tablespoon
  Salt 1⁄2 Teaspoon
  White pepper 1⁄8 Teaspoon
  Cream 1⁄2 Cup (8 tbs)
  Egg yolks 2 , fork beaten
  Finely snipped parsley 3 Tablespoon
  Lemon juice 4 Teaspoon

Cook beans in 1/2 cup chicken broth; drain.
Meanwhile, cook onion until soft in hot butter in a heavy saucepan.
Blend in the flour, salt, and pepper.
Heat until bubbly.
Stir in the cream and the remaining 3 tablespoons chicken broth; bring to boiling.
Cook and stir 1 to 2 minutes.
Remove from heat.
Vigorously stir about 3 tablespoons hot mixture into egg yolks.
Immediately blend into mixture in saucepan.
Mix in parsley.
Cook over low heat 3 to 5 minutes.
Remove from heat.
Stir in lemon juice.
Pour over hot beans and toss lightly.
